20 Ft Pizza Trailer Wood Fired Brick Oven With Porch

20 ft pizza trailer designed for authentic wood fired pizza production and high volume event service.

This 20 ft pizza trailer was custom built for high volume wood fired pizza service and beer sales. The trailer includes a 6 ft open porch designed specifically for a brick oven operation, allowing safe cooking ventilation and customer interaction during events and brewery service.

A wood fired mobile kitchen requires proper spacing, airflow, and workflow planning. This 20 ft pizza trailer layout separates cooking, preparation, and service areas to allow multiple staff members to operate efficiently during peak hours.

Brick Oven Cooking System

At the center of the trailer is a Forno Bravo 120 brick wood fired pizza oven. The oven is mounted toward the porch side to allow natural heat release and safe operation during long cooking periods. A built-in wood storage compartment under the oven includes an interior access door so staff can reload wood without leaving the trailer during service.

Wood fired cooking provides extremely high temperatures required for authentic Neapolitan style pizza. The layout allows continuous cooking while maintaining a comfortable working environment for operators.

Beer Service Integration

The trailer includes two under-counter refrigeration units, each equipped with four beer kegs and tap systems. This allows the operator to serve eight draft beer lines directly from the trailer, making it ideal for breweries, festivals, and catering events.

A dedicated TV compartment with a 50 inch commercial display allows menu presentation or live entertainment viewing. This improves customer engagement and increases average order value during events.

Refrigeration and Preparation Area

A six topping pizza prep refrigerator provides quick access to ingredients during service. Additional storage includes a large two-door reach in refrigerator for bulk ingredient storage. These refrigeration systems maintain consistent temperatures even during heavy service hours.

Proper prep area spacing allows staff to stretch dough, add toppings, and move pizzas to the oven without workflow interruption. Stainless steel tables provide durable and sanitary work surfaces for daily commercial operation.

Power and Electrical System

The trailer is powered by a quiet 7,000 watt generator mounted in a protective cage enclosure. The electrical system is designed to operate refrigeration, lighting, and air conditioning simultaneously without overload.

A 15,000 BTU rooftop air conditioning unit maintains interior temperature during summer events and high heat oven operation.

Sanitation and Health Compliance

The interior walls and ceiling are anodized aluminum for easy cleaning and durability. Aluminum diamond flooring provides slip resistance and long service life in a mobile environment.

The trailer includes a three compartment sink, hand washing sink, and six gallon water heater to meet health department regulations. All equipment installed is NSF certified commercial grade for inspection approval.

Built for High Volume Events

A 20 ft pizza trailer provides enough production capacity for festivals, private events, and brewery partnerships while remaining towable without commercial trucking requirements. The porch design improves safety, customer visibility, and authentic cooking presentation.

This layout allows the operator to produce large quantities of pizzas continuously while maintaining organized workflow and safe operating conditions.

Why Choose a Pizza Trailer Instead of a Truck

A pizza trailer provides more usable cooking space and safer oven operation compared to a step van build. The open porch design keeps extreme oven heat outside the main workspace and improves ventilation. Operators can maintain consistent production without overheating the interior workspace.

A trailer also allows higher equipment weight capacity. Brick ovens are extremely heavy and trailers distribute weight across dual axles more efficiently than trucks. This improves durability and reduces long-term chassis stress.

Because the kitchen is dedicated only to cooking, prep and service workflow becomes faster and more organized. Staff movement is reduced, allowing higher output during peak hours and festivals.
