Biz On Wheels built this 16ft cargo step van for Dosa, a vegetarian Indian food truck. The build gives the owners a compact but fully equipped kitchen with an all-stainless 304 interior, two serving windows on opposite sides of the truck, two electric awnings, a 12KW diesel generator and a fire suppression system.

Power and Climate Control
A quiet under-mount 12KW diesel generator with an 18-gallon diesel tank powers the dosa griddles, refrigeration and A/C. Two 15,000 BTU A/C units keep the kitchen comfortable, which is important when cooking on hot griddles all day.
Serving Windows on Both Sides
The truck has a 72-inch serving window with an awning door on the passenger side and a 48-inch serving window with an awning door on the driver side. Serving from both sides lets the truck adapt to any parking spot and run two lines at busy events. Two 10ft retractable electric awnings shade customers at both windows.
All-Stainless 304 Kitchen
The interior is finished entirely in 304 stainless steel, a hygienic, easy-to-clean surface well suited to a vegetarian kitchen working with batters, chutneys and sauces. A stainless steel hood system with an exhaust fan and makeup air fan ventilates the cooking line, and an integrated fire suppression system protects it. Aluminum tread brite diamond plate flooring adds traction, and all equipment is commercial-grade premium stainless steel and NSF certified.
Sinks, Propane and Entry
A three-compartment sink and hand washing sink meet health regulations. Two 29-gallon under-mount LP tanks with access doors give the truck a large propane supply for long service days, and a rear entry door with a screen provides ventilation.
Branding
A full-body graphic wrap brands the truck for Dosa and highlights its vegetarian Indian menu, helping the business stand out at food truck rallies and corporate lunch stops.
