Biz On Wheels built this mobile commercial kitchen on a 20ft heavy-duty diesel cargo truck. Designed for high-volume cooking, it includes a 30-gallon tilt skillet, TRUE refrigeration, a rear liftgate and a fire suppression system.
Heavy-Duty 20ft Diesel Truck
The build starts with a 20ft heavy-duty cargo diesel truck. A rear liftgate makes it easy to load and unload food, supplies and equipment, and a rear entry door provides access to the kitchen.
Power and Climate Control
A quiet under-mount Cummins Onan 12KW diesel generator with a slide-out runs from an 18-gallon diesel tank. Two 15,000 BTU A/C units keep the kitchen comfortable.
Tilt Skillet and TRUE Refrigeration
A 30-gallon tilt skillet allows large-batch cooking for catering, feeding programs and events. Premium TRUE refrigeration provides cold storage.
Stainless Kitchen and Fire Suppression
The interior is all stainless steel with stainless NSF-certified countertops and wall shelving, plus aluminum tread brite diamond plate flooring. A stainless hood system with an exhaust fan and make-up air fan is paired with a fire suppression system. Drop-in three-compartment and hand washing sinks are installed, and two 29-gallon under-mount LP tanks supply propane.
Exterior Lighting and Sound
A full-body 3M graphic wrap, LED flood lights all around the truck and a sound system with wireless microphones make it ready for outdoor events at night.
Who This Build Is For
A heavy-duty mobile kitchen with a tilt skillet and liftgate suits institutional feeding, catering, schools and emergency response teams that need to cook large batches on site. The liftgate makes loading supplies fast and safe.
Customizing a Build Like This
Every Biz On Wheels food truck is custom built to order, so a truck like this can be adapted to your menu, crew size and budget. Common changes include the step van length (from 12ft up to 22ft), generator size and fuel type, the number and size of serving windows, cooking and refrigeration equipment, awnings, TV menu displays and the wrap design. Each build uses commercial NSF-certified equipment and is laid out to meet local health and fire codes. Most custom builds take about 60 to 90 days depending on the job.
